- 4 boneless skinless chicken breasts
- 1 cup fresh spinach, chopped
- 1/2 cup dried cranberries
- 4 oz brie, sliced
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- Toothpicks for securing
Instructions
- 1. Cut a pocket into each chicken breast.
- 2. Mix spinach and cranberries, then stuff each chicken breast with the mixture and brie slices.
- 3. Secure with toothpicks.
- 4. Season the outside of the chicken with olive oil, garlic powder, salt, and pepper.
- 5. Heat a skillet over medium and sear chicken 3โ4 minutes per side.
- 6. Transfer to a 375ยฐF (190ยฐC) oven and bake for 20 minutes or until internal temperature reaches 165ยฐF.
- 7. Let rest 5 minutes before serving.
Notes
- For extra flavor, drizzle with a balsamic glaze before serving.
- Use fresh cranberries if you prefer a tartness boost.
