Description

Juicy chicken breasts stuffed with a festive mix of cranberries, spinach, and creamy brie.


Ingredients

  • 4 boneless skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 1/2 cup dried cranberries
  • 4 oz brie, sliced
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Toothpicks for securing

Instructions

  • 1. Cut a pocket into each chicken breast.
  • 2. Mix spinach and cranberries, then stuff each chicken breast with the mixture and brie slices.
  • 3. Secure with toothpicks.
  • 4. Season the outside of the chicken with olive oil, garlic powder, salt, and pepper.
  • 5. Heat a skillet over medium and sear chicken 3โ€“4 minutes per side.
  • 6. Transfer to a 375ยฐF (190ยฐC) oven and bake for 20 minutes or until internal temperature reaches 165ยฐF.
  • 7. Let rest 5 minutes before serving.

  • For extra flavor, drizzle with a balsamic glaze before serving.
