- 4 boneless, skinless chicken breasts
- 4 oz brie cheese, sliced
- 1/2 cup cranberry sauce (homemade or store-bought)
- 1 tbsp olive oil
- Salt and pepper, to taste
Instructions
- 1. Preheat oven to 375ยฐF (190ยฐC). Lightly grease a baking dish.
- 2. Use a sharp knife to slice a pocket horizontally into each chicken breast, being careful not to cut all the way through.
- 3. Season both sides of the chicken with salt and pepper.
- 4. Stuff each chicken breast with slices of brie and about 2 tablespoons of cranberry sauce.
- 5. Secure the openings with toothpicks to keep the filling inside.
- 6. Heat olive oil in a skillet over medium heat. Sear the stuffed chicken for 2โ3 minutes per side until golden brown.
- 7. Transfer to the prepared baking dish and bake for 15โ20 minutes, until chicken is cooked through (internal temperature 165ยฐF/74ยฐC).
- 8. Remove toothpicks and let rest for 5 minutes before serving.
