Ingredients
1/2 cup cottage cheese
1/2 cup unsweetened applesauce
1/2 cup maple syrup or honey
2 large eggs
1 teaspoon vanilla extract
1/2 cup cocoa powder
1/2 cup oat flour (or finely ground oats)
1/2 teaspoon baking powder
1/4 teaspoon salt
1/3 cup dark chocolate chips (optional)
Instructions
1. Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
2. In a blender or food processor, blend the cottage cheese, applesauce, maple syrup, eggs, and vanilla until smooth.
3. In a bowl, whisk together cocoa powder, oat flour, baking powder, and salt.
4. Pour the wet mixture into the dry ingredients and stir until just combined.
5. Fold in chocolate chips if using.
6. Pour batter into the prepared pan and spread evenly.
7. Bake for 20–25 minutes or until a toothpick inserted in the center comes out with a few moist crumbs.
8. Cool completely in the pan before slicing into squares.
9. Store in the fridge for extra fudginess.
