16 oz Cottage Cheese
5 oz Fresh Spinach, chopped
1/2 cup Shredded Cheese
1/4 cup Onion, finely chopped
2 cloves Garlic, minced
2 tbsp All-Purpose Flour
1/4 cup Milk
1/2 tsp Salt
1/4 tsp Black Pepper
Pinch Nutmeg


Instructions

  1. Preheat your oven to 375ยฐF (190ยฐC). Lightly grease a 9-inch pie dish or an 8×8 inch baking dish
  2. Heat a small amount of oil in a skillet over medium heat. Sautรฉ the chopped onion until translucent, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant
  3. Stir in the fresh spinach. Cook until it wilts completely, squeezing out any excess water
  4. In a large bowl, whisk the eggs vigorously. Add the cottage cheese, milk, flour, salt, pepper, and nutmeg (if using). Mix well until thoroughly combined
  5. Fold the sautรฉed onion, garlic, and spinach into the egg mixture. Stir in most of the shredded cheese, reserving a little for the top. Pour the entire mixture into your prepared pie dish
  6. Sprinkle the remaining shredded cheese over the top of the cottage Cheese and Spinach Crustless Quiche. Bake for 40-50 minutes, or until the center is set and the top is golden brown. A knife inserted into the center should come out clea
