Ingredients
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/4 cup brown sugar
1 large egg
1 teaspoon vanilla extract
3/4 cup all-purpose flour
1/2 cup yellow cornmeal
1/2 teaspoon baking soda
1/4 teaspoon salt
For the honey glaze:
2 tablespoons honey
1 tablespoon melted butter
1–2 teaspoons milk (to thin if needed)
Instructions
1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
3. Beat in egg and vanilla extract until smooth.
4. In a separate bowl, whisk together flour, cornmeal, baking soda, and salt.
5. Gradually mix dry ingredients into wet until fully combined.
6. Scoop tablespoon-sized portions of dough onto the baking sheet, spacing 2 inches apart.
7. Bake for 10–12 minutes or until edges are lightly golden.
8. While cookies bake, whisk together honey glaze ingredients until smooth.
9. Let cookies cool slightly, then drizzle with honey glaze before serving.
Notes
Use fine cornmeal for a more delicate texture.
For extra richness, brown the butter before mixing.
