A rich and indulgent cinnamon roll cheesecake featuring a graham cracker crust, cinnamon sugar swirls, and a creamy vanilla cheesecake filling topped with a smooth cream cheese glaze.

- For the crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/3 cup melted butter
- For the cinnamon swirl:
- 1/3 cup brown sugar
- 1 1/2 tsp ground cinnamon
- 2 tbsp all-purpose flour
- 2 tbsp melted butter
- For the cheesecake filling:
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 1/2 cup sour cream
- 3 large eggs
- 1 tbsp all-purpose flour
- 1 1/2 tsp vanilla extract
- For the glaze:
- 4 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 2–3 tbsp milk
Instructions
- 1. Preheat oven to 325°F (163°C). Line a 9-inch springform pan with parchment and lightly grease.
- 2. In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of the pan. Bake for 8 minutes, then cool.
- 3. In a small bowl, mix cinnamon swirl ingredients until combined. Set aside.
- 4. In a large bowl, beat cream cheese until smooth. Add sugar and mix until creamy. Add sour cream, eggs (one at a time), flour, and vanilla. Mix until smooth.
- 5. Pour half the cheesecake filling over the crust. Drizzle half the cinnamon swirl over the batter. Use a knife to gently swirl.
- 6. Repeat with remaining batter and swirl, then swirl again lightly on top.
- 7. Bake for 50–60 minutes or until the center is just set. Cool to room temperature, then chill for at least 4 hours or overnight.
- 8. For the glaze, beat cream cheese, powdered sugar, vanilla, and milk until pourable. Drizzle over chilled cheesecake before serving.
