  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1/2 cup sour cream
  • 3 large eggs
  • 1 tbsp all-purpose flour
  • 1 1/2 tsp vanilla extract

  • For the glaze:
  • 4 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 23 tbsp milk

Instructions

  • 1. Preheat oven to 325°F (163°C). Line a 9-inch springform pan with parchment and lightly grease.
  • 2. In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of the pan. Bake for 8 minutes, then cool.
  • 3. In a small bowl, mix cinnamon swirl ingredients until combined. Set aside.
  • 4. In a large bowl, beat cream cheese until smooth. Add sugar and mix until creamy. Add sour cream, eggs (one at a time), flour, and vanilla. Mix until smooth.
  • 5. Pour half the cheesecake filling over the crust. Drizzle half the cinnamon swirl over the batter. Use a knife to gently swirl.
  • 6. Repeat with remaining batter and swirl, then swirl again lightly on top.
  • 7. Bake for 50–60 minutes or until the center is just set. Cool to room temperature, then chill for at least 4 hours or overnight.
  • 8. For the glaze, beat cream cheese, powdered sugar, vanilla, and milk until pourable. Drizzle over chilled cheesecake before serving.
