Ingredients

- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1/4 tsp salt
- 3/4 cup mini chocolate chips
Instructions
- 1. Preheat oven to 325ยฐF (165ยฐC) and line a baking sheet with parchment paper.
- 2. In a large bowl, cream butter and powdered sugar until smooth.
- 3. Mix in vanilla extract.
- 4. Add flour and salt and mix until a soft dough forms.
- 5. Fold in chocolate chips.
- 6. Roll dough into 1-inch balls and place on baking sheet.
- 7. Gently flatten each cookie with the bottom of a glass.
- 8. Bake for 14โ16 minutes until edges are set but not browned.
- 9. Cool on the baking sheet for 5 minutes, then transfer to a wire rack.
Notes
- Do not overbake shortbread should stay pale.
- Chill dough for 20 minutes if it feels too soft to handle.
