Chocolate Chip Shortbread Cookies

Description

Buttery, tender shortbread cookies studded with chocolate chips simple, classic, and perfect with coffee or tea.


Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/4 tsp salt
  • 3/4 cup mini chocolate chips

Instructions

  • 1. Preheat oven to 325ยฐF (165ยฐC) and line a baking sheet with parchment paper.
  • 2. In a large bowl, cream butter and powdered sugar until smooth.
  • 3. Mix in vanilla extract.
  • 4. Add flour and salt and mix until a soft dough forms.
  • 5. Fold in chocolate chips.
  • 6. Roll dough into 1-inch balls and place on baking sheet.
  • 7. Gently flatten each cookie with the bottom of a glass.
  • 8. Bake for 14โ€“16 minutes until edges are set but not browned.
  • 9. Cool on the baking sheet for 5 minutes, then transfer to a wire rack.

Notes

  • Do not overbake shortbread should stay pale.
  • Chill dough for 20 minutes if it feels too soft to handle.
