- 1 can (15 oz) chickpeas, drained and rinsed
- 1/2 cup grated zucchini, moisture squeezed out
- 1/3 cup grated carrot
- 1/4 cup finely chopped red onion
- 2 cloves garlic, minced
- 1 large egg
- 1/3 cup all-purpose flour or oat flour
- 1 tsp ground cumin
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil (for frying)
Instructions
- 1. Add chickpeas to a bowl and mash with a fork, leaving some texture.
- 2. Stir in zucchini, carrot, red onion, garlic, egg, flour, cumin, paprika, salt, and pepper until combined.
- 3. Heat olive oil in a skillet over medium heat.
- 4. Scoop about 2 tablespoons of mixture per fritter and flatten slightly in the pan.
- 5. Cook fritters for 3โ4 minutes per side until golden and crispy.
- 6. Transfer to a paper towel-lined plate.
- 7. Serve warm with yogurt sauce, tahini, or a fresh salad.
Notes
- For extra crispiness, refrigerate the mixture for 10 minutes before cooking.
- These fritters are great for meal prep and reheat well in an air fryer or skillet.
