Description
A comforting and hearty casserole made with tender chicken thighs, creamy sauce, and chewy hominy—flavored with southwestern spices and baked to golden perfection.
Ingredients
1 1/2 lbs boneless, skinless chicken thighs
1 tbsp olive oil
1 small onion, chopped
2 cloves garlic, minced
1 can (15 oz) white hominy, drained and rinsed
1 can (10 oz) diced tomatoes with green chilies
1/2 cup sour cream
1/2 cup chicken broth
1 cup shredded cheddar or Monterey Jack cheese
1/2 tsp ground cumin
1/2 tsp smoked paprika
Salt and pepper to taste
Chopped cilantro and sliced green onions for garnish (optional)
Instructions
1. Preheat oven to 375°F (190°C) and grease a 9×13-inch casserole dish.
2. Season chicken thighs with salt, pepper, cumin, and paprika.
3. In a skillet, heat olive oil over medium heat and sear chicken thighs for 3–4 minutes per side until lightly browned. Remove and set aside.
4. In the same skillet, sauté onion and garlic until soft.
5. Stir in hominy, diced tomatoes with green chilies, sour cream, and chicken broth. Mix until well combined.
6. Pour mixture into the prepared baking dish.
7. Nestle browned chicken thighs into the casserole and top with shredded cheese.
8. Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10–15 minutes until cheese is melted and bubbly.
9. Garnish with chopped cilantro and green onions before serving.
Notes
You can substitute shredded rotisserie chicken to save time—just mix it into the hominy mixture before baking.
Try adding black beans, corn, or diced bell peppers for more texture and flavor.
Leftovers reheat well and can be stored in the refrigerator for up to 4 days.
