- 2 tablespoons butter or olive oil
- 1 pound cooked chicken, shredded or diced
- 1 onion, chopped
- 2 carrots, diced
- 2 cloves garlic, minced
- 1 cup frozen peas
- 2 tablespoons all-purpose flour
- 1 cup chicken broth
- 1/2 cup milk or cream
- Salt and pepper to taste
- 1/2 teaspoon dried thyme
- 3 cups mashed potatoes (prepared in advance)
- Optional: shredded cheddar cheese for topping
Instructions
- 1. Preheat oven to 400ยฐF (200ยฐC).
- 2. In a large skillet, heat butter or oil over medium heat. Add onion, carrots, and garlic. Cook for 5โ7 minutes until softened.
- 3. Stir in the flour and cook for 1 minute to form a roux.
- 4. Slowly whisk in chicken broth and milk, stirring constantly until thickened.
- 5. Add the shredded chicken, peas, thyme, salt, and pepper. Simmer for 2โ3 minutes.
- 6. Transfer the chicken mixture to a greased 9-inch baking dish.
- 7. Spoon mashed potatoes evenly over the top, spreading to cover.
- 8. Sprinkle with cheese if using and bake for 20โ25 minutes, or until golden and bubbling.
- 9. Let rest for 5 minutes before serving.
Notes
- Use rotisserie or leftover chicken for a quick shortcut.
- Mashed cauliflower can be used as a low-carb topping.
- Make it ahead and refrigerate. Just increase bake time slightly if cooking from cold.
