- 1 1/2 lb boneless skinless chicken thighs
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 4 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp ground coriander
- 1/2 tsp turmeric
- 1/2 tsp cinnamon
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 cup plain Greek yogurt
- 1/4 cup mayonnaise
- 1 tbsp lemon juice (for sauce)
- 2 cloves garlic, grated (for sauce)
Instructions
- 1. In a large bowl, mix olive oil, lemon juice, garlic, cumin, paprika, coriander, turmeric, cinnamon, salt, and pepper.
- 2. Add chicken and toss to coat evenly. Marinate for at least 30 minutes or up to 24 hours.
- 3. Heat a large skillet or grill pan over medium-high heat.
- 4. Cook chicken for 5โ7 minutes per side until browned and cooked through.
- 5. Remove chicken from heat and rest for 5 minutes, then slice thinly.
- 6. In a small bowl, whisk together Greek yogurt, mayonnaise, lemon juice, and grated garlic.
- 7. Serve chicken shawarma with garlic sauce, pita, or over rice or salad.
Notes
- Chicken thighs stay juicier, but chicken breasts can be used if preferred.
- Add sliced cucumbers, tomatoes, or pickles for a traditional serving.
