- 2 cups cooked chicken, diced or shredded
- 2 cups cooked white or brown rice
- 2 cups broccoli florets, steamed
- 1 can (10.5 oz) cream of chicken soup
- 1/2 cup milk
- 1/2 cup sour cream
- 2 cups shredded cheddar cheese
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp black pepper
- Salt to taste
- 1/2 cup crushed crackers or breadcrumbs (optional)
- 2 tbsp melted butter (optional)
Instructions
- 1. Preheat oven to 375ยฐF (190ยฐC) and grease a 9×13-inch baking dish.
- 2. In a large bowl, combine cream of chicken soup, milk, sour cream, garlic powder, onion powder, pepper, and salt.
- 3. Stir in cooked chicken, rice, broccoli, and 1 1/2 cups shredded cheese.
- 4. Spread mixture evenly into the prepared baking dish.
- 5. Sprinkle remaining cheese over the top.
- 6. If using topping, mix crushed crackers or breadcrumbs with melted butter and sprinkle evenly over casserole.
- 7. Bake uncovered for 35โ40 minutes until bubbly and lightly golden.
- 8. Let rest for 5 minutes before serving.
Notes
- Use rotisserie chicken to save time.
- This casserole can be assembled ahead and refrigerated up to 24 hours before baking.
