Description
This classic chicken broccoli rice casserole is creamy, cheesy, and comforting—a family favorite made with tender chicken, fluffy rice, fresh broccoli, and a golden cheesy topping.
Ingredients
2 cups cooked chicken, shredded or cubed
2 cups cooked rice (white or brown)
2 cups fresh or frozen broccoli florets
1 can (10.5 oz) cream of chicken soup
1/2 cup sour cream
1 cup shredded cheddar cheese, divided
1/2 teaspoon garlic powder
Salt and pepper to taste
1/4 cup milk (optional, for thinning)
1 tablespoon butter or oil (for greasing dish)
Instructions
1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
2. If using fresh broccoli, steam lightly until just tender (about 3–4 minutes). Skip this step for frozen broccoli.
3. In a large bowl, combine cooked chicken, rice, broccoli, cream of chicken soup, sour cream, 1/2 cup cheese, garlic powder, salt, pepper, and milk if needed.
4. Mix until everything is well coated.
5. Spread the mixture evenly into the prepared baking dish.
6. Top with the remaining 1/2 cup shredded cheese.
7. Bake uncovered for 25–30 minutes until bubbly and golden on top.
8. Let rest 5 minutes before serving.
Notes
Add crushed butter crackers or breadcrumbs on top for crunch.
Use rotisserie chicken to save time.
To make it from scratch, replace canned soup with a homemade roux-based sauce.
