- For the chicken:
- 2 boneless, skinless chicken breasts, pounded thin
- 1/2 cup buttermilk
- 1/2 cup all-purpose flour
- 1/2 cup panko breadcrumbs
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons vegetable oil
- For the biscuits:
- 1 can refrigerated flaky biscuits (8 count)
- For the gravy:
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 1/2 cups milk
- Salt and black pepper to taste
Instructions
- 1. Preheat oven and bake biscuits according to package instructions.
- 2. While biscuits bake, dip chicken in buttermilk, then dredge in a mix of flour, panko, paprika, salt, and pepper.
- 3. Heat oil in a skillet over medium-high. Fry chicken 3โ4 minutes per side until golden and cooked through. Transfer to a plate.
- 4. In a small saucepan, melt butter over medium heat. Whisk in flour and cook 1 minute.
- 5. Gradually whisk in milk and cook until thickened. Season with salt and plenty of black pepper.
- 6. Split biscuits and top each with crispy chicken. Spoon warm gravy over the top.
- 7. Serve immediately with optional hot sauce or fresh parsley.
Notes
- For extra crispiness, air fry the chicken instead of pan-frying.
- Use rotisserie chicken for an even faster shortcut.
- Double the gravy if you like it extra saucy!
