Ingredients
For the chicken:
4 boneless, skinless chicken thighs or breasts
Salt and black pepper to taste
1 teaspoon garlic powder
1 teaspoon paprika
2 tablespoons olive oil or butter
For the gravy:
2 tablespoons butter
2 tablespoons all-purpose flour
1 1/2 cups chicken broth
1/2 cup milk or cream

For the mashed potatoes:
2 pounds potatoes, peeled and cubed
1/2 cup milk
1/4 cup butter

Instructions
1. Place potatoes in a large pot, cover with water, and bring to a boil. Simmer 12โ15 minutes until fork tender.
2. Meanwhile, season chicken with salt, pepper, garlic powder, and paprika.
3. Heat oil in a skillet over medium-high. Sear chicken for 5โ6 minutes per side until golden brown and cooked through. Transfer to a plate and keep warm.
4. In the same skillet, melt butter. Whisk in flour and cook for 1 minute to form a roux.
5. Gradually whisk in chicken broth and milk. Cook until thickened, 3โ5 minutes. Season with salt and pepper.
6. Drain potatoes and mash with milk, butter, salt, and pepper until smooth.
7. Serve chicken over mashed potatoes with generous spoonfuls of gravy on top.
