1.5 lbs Boneless, Skinless Chicken Breasts or Thighs
1 tbsp Olive Oil
1 medium Yellow Onion, chopped
2 medium Carrots, chopped
2 medium Celery Stalks, chopped
3 cloves Garlic, minced
6 cups Chicken Broth
1/2 cup Heavy Cream
1/4 cup All-Purpose Flour
1 cup Frozen Peas
1/4 cup Fresh Parsley, chopped
To taste Salt and Black Pepper
1 box Red Lobster Cheddar Bay Biscuit Mix
As per biscuit mix instructions Cold Water or Milk
As per biscuit mix instructions Shredded Cheddar Cheese (plus extra for topping)

Instructions
- Prepare Chicken: Dice chicken into 1-inch pieces. Season with salt and pepper
- Sautรฉ Aromatics: Heat olive oil in a large Dutch oven or pot over medium-high heat. Add onion, carrots, and celery. Cook until softened, about 5-7 minutes. Stir in minced garlic and cook for another minute until fragrant
- Cook Chicken: Add the seasoned chicken to the pot. Cook until lightly browned on all sides, about 5 minutes. It doesn’t need to be cooked through yet
- Thicken Base: Sprinkle flour over the chicken and vegetables. Stir constantly for 1-2 minutes to cook out the raw flour taste
- Simmer Stew: Gradually pour in chicken broth, stirring constantly to prevent lumps. Bring the mixture to a gentle simmer. Reduce heat to low, cover, and cook for 15-20 minutes, or until chicken is cooked through and vegetables are tender
- Add Cream & Veggies: Stir in heavy cream and frozen peas. Simmer for another 5 minutes, allowing the chicken and dumplings base to thicken slightly. Taste and adjust seasoning as needed for your perfect chicken and dumplings
- Prepare Biscuits: While the stew simmers, prepare the cheddar bay biscuit mix according to package directions. Stir in the required cheddar cheese
- Top with Biscuits: Drop spoonfuls of the biscuit dough directly onto the simmering chicken and dumplings stew. Leave some space between them
- Bake: Cover the pot and cook for 15-20 minutes, or until biscuits are puffed and cooked through. Alternatively, transfer the stew to an oven-safe casserole dish, top with biscuits, and bake at 400ยฐF (200ยฐC) for 15-20 minutes until golden brow
