Ingredients
For the crust:
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup (1 stick) unsalted butter, melted
For the filling:
16 oz cream cheese, softened
1 cup powdered sugar
1 tsp vanilla extract
1 cup heavy whipping cream
For the topping:
1 can (21 oz) cherry pie filling
Instructions
1. In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until evenly moistened.
2. Press the mixture firmly into the bottom of a 9-inch springform pan or pie dish. Chill in the refrigerator while preparing the filling.
3. In a large bowl, beat cream cheese until smooth and fluffy.
4. Add powdered sugar and vanilla extract and beat until combined.
5. In a separate bowl, whip the heavy cream until stiff peaks form.
6. Gently fold the whipped cream into the cream cheese mixture until smooth.
7. Spread the filling evenly over the chilled crust.
8. Top with cherry pie filling, spreading it evenly.
9. Cover and refrigerate for at least 4 hours or overnight before serving.
Notes
For best texture, chill overnight before slicing.
You can substitute whipped topping for heavy cream for convenience.
