- 1 1/2 lbs baby potatoes, cut into bite-sized chunks
- 12 oz smoked sausage, sliced into rounds
- 1 packet (1 oz) ranch seasoning mix
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 2 tbsp olive oil
- 2 green onions, sliced
- Salt and pepper to taste
- Optional garnish: extra cheese, parsley, or crispy bacon bits
Instructions
- 1. Preheat oven to 400ยฐF (200ยฐC) and grease a 9×13-inch baking dish.
- 2. In a large bowl, toss potatoes with olive oil, ranch seasoning mix, salt, and pepper until evenly coated.
- 3. Spread potatoes onto the baking dish and roast for 25 minutes, stirring halfway through.
- 4. While the potatoes bake, slice the smoked sausage into rounds.
- 5. After 25 minutes, remove the potatoes from the oven and add the sausage slices. Stir to combine.
- 6. Return to oven and bake for another 15โ20 minutes, until potatoes are tender and sausage is lightly browned.
- 7. In a small bowl, mix sour cream and mayonnaise until smooth.
- 8. Remove baking dish from oven and toss everything with the sour cream mixture.
- 9. Top with shredded cheddar cheese and return to oven for 5 minutes, until cheese is melted and bubbly.
- 10. Garnish with green onions, parsley, or crispy bacon bits before serving.
Notes
- You can substitute russet or Yukon gold potatoes if preferred.
- For extra heat, use spicy smoked sausage or add a sprinkle of cayenne.
- Leftovers reheat well in a skillet or microwave, perfect for meal prep or next-day breakfast with eggs.
