- For the filling:
- 2 tbsp butter
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 medium carrots, sliced
- 2 celery stalks, chopped
- 1/4 cup all-purpose flour
- 2 cups cooked, shredded chicken
- 1 3/4 cups chicken broth
- 1/2 cup milk
- 1/2 cup frozen peas
- 1/2 tsp dried thyme
- Salt and pepper to taste

- For the biscuit topping:
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/2 cup cold unsalted butter, cubed
- 1 1/2 cups shredded cheddar cheese
- 3/4 cup milk
- 1 tbsp chopped parsley (optional)

- Optional garlic butter topping:
- 2 tbsp melted butter
- 1/4 tsp garlic powder
- 1 tsp parsley
Instructions
- 1. Preheat oven to 400ยฐF (200ยฐC).
- 2. In a large skillet, melt butter over medium heat. Add onion, garlic, carrots, and celery. Cook until softened, about 5โ6 minutes.
- 3. Stir in flour and cook for 1 minute, stirring constantly.
- 4. Gradually whisk in chicken broth and milk. Bring to a simmer and cook until thickened, about 3โ4 minutes.
- 5. Add shredded chicken, peas, thyme, salt, and pepper. Mix well and transfer to a greased 9×13-inch baking dish.
- 6. In a mixing bowl, whisk together flour, baking powder, garlic powder, and salt. Cut in cold butter until crumbly.
- 7. Stir in cheddar cheese and milk until just combined. Fold in parsley if using.
- 8. Drop biscuit dough by large spoonfuls on top of the filling.
- 9. Bake uncovered for 25โ30 minutes or until biscuits are golden brown and cooked through.
- 10. Mix melted butter with garlic powder and parsley and brush over hot biscuits just before serving.
Notes
- Use rotisserie chicken for a quick prep shortcut.
- You can use a biscuit mix base, but homemade Cheddar Bay-style biscuits give the best flavor.
- Leftovers store well in the fridge for up to 3 days and reheat nicely in the oven.
