Ingredients

- 1 cup rolled oats
- 1/2 cup finely grated carrots
- 1/3 cup almond butter or peanut butter
- 1/4 cup honey or maple syrup
- 1/4 cup unsweetened shredded coconut
- 1/4 cup chopped walnuts or pecans
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1 tsp vanilla extract
Instructions
- 1. Add all ingredients to a large bowl.
- 2. Stir until fully combined and a sticky dough forms.
- 3. If mixture is too dry, add 1โ2 teaspoons of water or honey.
- 4. Roll mixture into 1-inch balls using your hands.
- 5. Place energy balls on a parchment-lined tray.
- 6. Refrigerate for at least 30 minutes to firm up.
- 7. Store in an airtight container in the refrigerator.
Notes
- For extra protein, add 1โ2 tablespoons of vanilla protein powder.
- These energy balls keep well in the fridge for up to one week or can be frozen.
