Description
This homemade version of Buona Beefโs minestrone soup is hearty, vegetable-packed, and perfect for a lighter meal made with beans, pasta, and savory Italian seasonings.

- 2 tablespoons olive oil
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 1 zucchini, diced
- 1 (15 oz) can diced tomatoes
- 1 (15 oz) can kidney beans, drained and rinsed
- 4 cups vegetable or chicken broth
- 1 cup chopped spinach or kale
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 3/4 cup ditalini or small pasta
- Grated Parmesan for serving (optional)
Instructions
- 1. In a large pot, heat olive oil over medium heat. Add onion, carrot, and celery. Sautรฉ for 5โ7 minutes.
- 2. Stir in garlic and cook for 1 minute until fragrant.
- 3. Add zucchini, diced tomatoes, and kidney beans. Stir to combine.
- 4. Pour in broth and bring to a boil. Reduce to a simmer and add Italian seasoning, salt, and pepper.
- 5. Stir in pasta and cook for 8โ10 minutes until tender.
- 6. Add spinach or kale and cook another 2โ3 minutes.
- 7. Adjust seasoning to taste. Ladle into bowls and top with Parmesan if desired.
Notes
- Use whole wheat pasta for more fiber.
- Soup keeps well refrigerated for up to 4 days and freezes beautifully.
- Add green beans, peas, or cabbage for even more veggie power.
