Description
A light and fluffy pink cake made with strawberry flavor and a tender vanilla crumb perfect for birthdays, baby showers, or any celebration that calls for something sweet and rosy.

- For the cake:
- 2 1/2 cups all-purpose flour
- 2 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup unsalted butter, softened
- 1 3/4 cups granulated sugar
- 4 large egg whites
- 1 tsp vanilla extract
- 1/2 tsp almond extract (optional)
- 1/3 cup strawberry puree or strawberry syrup
- 1 cup whole milk
- A few drops pink food coloring
- For the frosting:
- 1 cup unsalted butter, softened
- 3–3 1/2 cups powdered sugar
- 2 tbsp heavy cream or milk
- 1 tsp vanilla extract
- Pinch of salt
- Optional: pink food coloring
Instructions
- 1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- 2. In a medium bowl, whisk together flour, baking powder, and salt.
- 3. In a large bowl, cream butter and sugar until light and fluffy.
- 4. Add egg whites one at a time, beating well after each. Mix in vanilla, almond extract, and strawberry puree.
- 5. Add flour mixture alternately with milk, beginning and ending with flour. Stir in pink food coloring.
- 6. Divide batter evenly between prepared pans and smooth the tops.
- 7. Bake 25–30 minutes or until a toothpick inserted comes out clean. Let cool completely.
- 8. To make frosting, beat butter until creamy. Gradually add powdered sugar, cream, vanilla, and food coloring if using. Beat until fluffy.
- 9. Frost the cooled cake layers and decorate as desired.
Notes
- Use freeze-dried strawberry powder for more intense natural flavor.
- For a deeper pink, use gel food coloring.
- Store covered at room temperature for 2 days or refrigerate for up to 5 days.
