Ingredients
1 cup Unsalted Butter
ยฝ cup Granulated Sugar
1 cup Brown Sugar
2 Large Eggs
1 tsp Vanilla Extract
2 ยผ cups All-Purpose Flour
1 tsp Baking Soda
ยฝ tsp Salt
1 tbsp Instant Coffee Granules
1 cup Toffee Bits
ยฝ cup Chocolate Chips (optional)
Instructions
- Brown Butter: Melt unsalted butter in a light-colored saucepan over medium heat. Swirl occasionally. It will foam, then turn golden brown, and smell nutty. Remove from heat immediately, pour into a heatproof bowl, and cool for 10-15 minutes
- Combine Wet: In a large bowl, whisk together the cooled brown butter, granulated sugar, and brown sugar until smooth. Beat in the eggs, one at a time, then stir in the vanilla extract
- Add Dry: In a separate bowl, whisk together the flour, baking soda, salt, and instant coffee granules. Gradually add the dry ingredients to the wet, mixing until just combined. Do not overmix
- Fold in Toffee & Chocolate: Gently fold in the toffee bits and optional chocolate chips until evenly distributed throughout the coffee toffee cookie dough
- Chill Dough (Recommended): Cover the bowl and chill the dough for at least 30 minutes, or up to 24 hours
- Preheat & Scoop: Preheat your oven to 375ยฐF (190ยฐC). Line baking sheets with parchment paper. Scoop rounded tablespoons of dough onto the prepared sheets, spacing them about 2 inches apart
- Bake: Bake for 9-12 minutes, or until the edges are golden brown and the centers are just set. They might look slightly underdone, but they will continue to set as they cool
- Cool: Let the brown butter coffee toffee cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely
