A kid-friendly, nutritious breakfast pizza designed for school cafeterias—featuring whole grain crust, scrambled eggs, turkey sausage, and low-fat cheese for a balanced, hand-held morning meal.
Ingredients
1 lb whole wheat pizza dough (store-bought or homemade)
6 large eggs
1/4 cup low-fat milk
1/4 tsp salt
1/4 tsp black pepper
1/2 cup cooked turkey sausage crumbles
1/2 cup shredded low-fat cheddar cheese
1/2 cup shredded part-skim mozzarella
1 tbsp olive oil
Optional toppings: diced bell peppers, spinach, tomatoes
Instructions
1. Preheat oven to 425°F (220°C). Lightly grease a large sheet pan or pizza tray.
2. Roll out the pizza dough into a rectangle or circle and place on the prepared tray.
3. In a bowl, whisk eggs, milk, salt, and pepper. Scramble in a nonstick pan over medium heat until just set.
4. Brush olive oil over the dough and par-bake for 5–6 minutes.
5. Spread scrambled eggs evenly over the crust. Sprinkle with turkey sausage and cheeses.
6. Add optional vegetables if desired.
7. Bake for another 8–10 minutes until cheese is melted and crust is golden.
8. Cool slightly, slice into squares or wedges, and serve.
Notes
Great for batch cooking—can be cooled, wrapped, and refrigerated or frozen.
Reheat individual slices in a toaster oven or microwave.
Use egg whites or egg substitute for lower cholesterol options.
