- 1 lb whole wheat pizza dough (store-bought or homemade)
- 6 large eggs
- 1/4 cup low-fat milk
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/2 cup cooked turkey sausage crumbles
- 1/2 cup shredded low-fat cheddar cheese
- 1/2 cup shredded part-skim mozzarella
- 1 tbsp olive oil
- Optional toppings: diced bell peppers, spinach, tomatoes
Instructions
- 1. Preheat oven to 425°F (220°C). Lightly grease a large sheet pan or pizza tray.
- 2. Roll out the pizza dough into a rectangle or circle and place on the prepared tray.
- 3. In a bowl, whisk eggs, milk, salt, and pepper. Scramble in a nonstick pan over medium heat until just set.
- 4. Brush olive oil over the dough and par-bake for 5–6 minutes.
- 5. Spread scrambled eggs evenly over the crust. Sprinkle with turkey sausage and cheeses.
- 6. Add optional vegetables if desired.
- 7. Bake for another 8–10 minutes until cheese is melted and crust is golden.
- 8. Cool slightly, slice into squares or wedges, and serve.
