Description

A rich and creamy breakfast casserole loaded with eggs, sausage, and cream cheeseโ€”perfect for brunch gatherings, holidays, or make-ahead weekday meals.


Ingredients

1 lb breakfast sausage

1 small onion, diced

8 oz cream cheese, softened

8 large eggs

1/2 cup milk

1/2 tsp salt

1/4 tsp black pepper

1/2 tsp garlic powder

1 cup shredded cheddar cheese

2 cups frozen hash browns (thawed) or cubed bread

Butter or oil for greasing the dish

Optional: chopped green onions or parsley for garnish


Instructions

1. Preheat oven to 350ยฐF (175ยฐC) and grease a 9×13-inch baking dish.

2. In a skillet, cook sausage and diced onion over medium heat until browned. Drain excess fat.

3. Add cream cheese to the skillet and stir until melted and combined with sausage. Remove from heat.

4. In a large bowl, whisk together eggs, milk, salt, pepper, and garlic powder.

5. Stir in cheddar cheese and hash browns or bread.

6. Fold in the sausage and cream cheese mixture.

7. Pour everything into the prepared baking dish and spread evenly.

8. Bake uncovered for 35โ€“45 minutes, or until the center is set and the top is golden.

9. Let rest for 5โ€“10 minutes before serving. Garnish with green onions or parsley if desired.

Notes

This casserole can be assembled the night before and baked in the morning.

Try adding chopped spinach, bell peppers, or mushrooms for extra veggies.

Leftovers reheat well and can be stored in the fridge for up to 4 days.
