Ingredients

2 tbsp Olive oil
1 medium Yellow onion, chopped
3 cloves Garlic, minced
1 large head Green cabbage, cored and chopped
4 medium Russet or Yukon Gold potatoes, peeled and diced
4 cups Vegetable or chicken broth
1 tbsp Apple cider vinegar
1 tsp Salt
ยฝ tsp Black pepper
Fresh dill or parsley, chopped (Optional)


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion and sautรฉ until softened, about 5-7 minutes
  2. Stir in minced garlic and cook for another minute until fragrant
  3. Add the chopped cabbage to the pot. Cook, stirring occasionally, until it begins to wilt, about 8-10 minutes
  4. Next, add the diced potatoes, broth, apple cider vinegar, salt, and pepper. Stir everything together
  5. Bring the mixture to a simmer. Reduce heat to low, cover the pot, and cook for 20-25 minutes, or until the potatoes are tender and the cabbage is very soft
