Description
This braided chocolate chip brioche recipe is rich, tender, and lightly sweet perfect for brunch, gifting, or a luxurious breakfast. Soft, buttery dough is woven with melty chocolate chips into an eye-catching loaf.

- 3 1/4 cups all-purpose flour
- 1/4 cup sugar
- 2 1/4 teaspoons instant yeast
- 1 teaspoon salt
- 3 large eggs
- 1/2 cup whole milk, lukewarm
- 10 tablespoons unsalted butter, softened and cubed
- 1 cup mini chocolate chips
- 1 egg (for egg wash)
- Optional: coarse sugar or pearl sugar for topping
Instructions
- 1. In a stand mixer bowl, combine flour, sugar, yeast, and salt.
- 2. Add eggs and milk. Mix with dough hook on low until a shaggy dough forms.
- 3. Increase speed and knead for 6–8 minutes until smooth. Add butter a few cubes at a time, mixing until fully incorporated.
- 4. Knead for another 5–6 minutes until dough is shiny and elastic.
- 5. Fold in chocolate chips gently.
- 6. Cover bowl and let dough rise in a warm place until doubled, about 1 1/2 hours.
- 7. Punch down dough and divide into 3 equal portions. Roll each into a rope.
- 8. Braid the ropes and tuck ends under. Place on a parchment-lined baking sheet.
- 9. Cover loosely and let rise again for 45–60 minutes.
- 10. Preheat oven to 350°F (175°C). Brush loaf with egg wash and sprinkle with sugar if using.
- 11. Bake for 30–35 minutes until golden brown and cooked through. Cool on a rack before slicing.
Notes
- Use mini chocolate chips to avoid tearing the dough.
- Dough can be made ahead and refrigerated overnight after first rise.
- Best enjoyed fresh but can be stored in an airtight container for 2–3 days or frozen for later.
