0.5 cup Unsalted butter, softened
34 cups Powdered sugar (confectioners’ sugar), sifted
1 teaspoon Vanilla extract
Pinch of salt


Instructions

  1. Combine blueberries and granulated sugar in a small saucepan. Simmer over medium heat for 5-7 minutes, until the berries break down and the mixture thickens. Strain the reduction through a fine-mesh sieve, pressing on the solids to extract all the juice. Discard the pulp. Let the blueberry reduction cool completely
  2. In a large mixing bowl, beat softened cream cheese and butter together with an electric mixer until smooth and creamy. Scrape down the sides of the bowl
  3. Gradually add the sifted powdered sugar, one cup at a time, mixing on low speed until combined. Mix in vanilla extract and a pinch of salt
  4. Pour the cooled blueberry reduction into the frosting. Beat on medium speed until fully incorporated and the frosting is smooth and fluffy. Avoid overmixing
