- 1 1/2 cups all-purpose flour
- 1/2 cup powdered sugar
- 3/4 cup unsalted butter, cold and cubed
- 2 cups fresh or frozen blackberries
- 1/2 cup granulated sugar
- 2 tablespoons lemon juice
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup all-purpose flour (for filling)
- 1/2 cup chopped pistachios
Instructions
- 1. Preheat the oven to 350ยฐF (175ยฐC) and line an 8×8-inch baking pan with parchment paper
- 2. In a bowl, combine flour and powdered sugar, then cut in the butter until crumbly
- 3. Press the mixture evenly into the bottom of the prepared pan
- 4. Bake the crust for 15 minutes until lightly golden
- 5. Meanwhile, mash the blackberries slightly in a bowl
- 6. Stir in granulated sugar, lemon juice, eggs, vanilla extract, and flour until combined
- 7. Pour the blackberry mixture over the warm crust
- 8. Sprinkle chopped pistachios evenly over the top
- 9. Bake for 30โ35 minutes until the filling is set
- 10. Cool completely before slicing into bars
Notes
- Frozen blackberries should be thawed and drained well
- Bars slice best when fully cooled
- Store leftovers in the refrigerator for up to 4 days
