Description

Decadent blackberry pistachio dream bars with a buttery crust, vibrant blackberry filling, and a crunchy pistachio topping for an irresistible dessert.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 3/4 cup unsalted butter, cold and cubed
  • 2 cups fresh or frozen blackberries
  • 1/2 cup granulated sugar
  • 2 tablespoons lemon juice
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup all-purpose flour (for filling)
  • 1/2 cup chopped pistachios

Instructions

  • 1. Preheat the oven to 350ยฐF (175ยฐC) and line an 8×8-inch baking pan with parchment paper
  • 2. In a bowl, combine flour and powdered sugar, then cut in the butter until crumbly
  • 3. Press the mixture evenly into the bottom of the prepared pan
  • 4. Bake the crust for 15 minutes until lightly golden
  • 5. Meanwhile, mash the blackberries slightly in a bowl
  • 6. Stir in granulated sugar, lemon juice, eggs, vanilla extract, and flour until combined
  • 7. Pour the blackberry mixture over the warm crust
  • 8. Sprinkle chopped pistachios evenly over the top
  • 9. Bake for 30โ€“35 minutes until the filling is set
  • 10. Cool completely before slicing into bars

Notes

  • Frozen blackberries should be thawed and drained well
  • Bars slice best when fully cooled
