Description

Ingredients

For the cake:

1 3/4 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

3/4 cup unsalted butter, softened

1 cup brown sugar

3 large eggs

1 teaspoon vanilla extract

1/2 cup whole milk

1/2 cup Biscoff cookie butter spread

For the frosting:

1/2 cup unsalted butter, softened

1/2 cup Biscoff spread

2 cups powdered sugar

23 tablespoons milk or cream

For topping:

1/4 cup melted Biscoff spread

Biscoff cookies, crushed (for garnish)


Instructions

1. Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans.

2. In a medium bowl, whisk together flour, baking powder, and salt.

3. In a large bowl, beat butter and brown sugar until light and fluffy.

4. Add eggs one at a time, mixing well after each. Stir in vanilla extract and Biscoff spread.

5. Alternately add the flour mixture and milk to the batter, starting and ending with flour. Mix until just combined.

6. Divide the batter evenly between prepared pans and smooth the tops.

7. Bake for 25–30 minutes or until a toothpick comes out clean. Let cool completely.

8. To make the frosting, beat butter and Biscoff spread until smooth.

9. Add powdered sugar gradually, beating until fluffy. Add milk as needed to reach desired consistency.

10. Spread frosting between cake layers and over the top and sides of the cake.

11. Drizzle melted Biscoff over the top and sprinkle with crushed cookies.

12. Chill slightly before slicing for clean cuts.

Notes

For extra Biscoff flavor, crush cookies and fold them into the frosting.

Cake layers can be made a day ahead and wrapped tightly.

Store cake covered at room temperature for up to 2 days or refrigerated for up to 5 days.
