Hearty and comforting crockpot beef stew with tender beef, vegetables, and a rich savory broth slowly cooked for deep flavor.
Ingredients

- 2 pounds beef chuck, cut into 1-inch cubes
- 3 cups potatoes, diced
- 2 cups carrots, sliced
- 1 cup celery, chopped
- 1 small onion, diced
- 3 cloves garlic, minced
- 3 cups beef broth
- 2 tablespoons tomato paste
- 2 tablespoons Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 2 tablespoons cornstarch
- 2 tablespoons water
- 2 tablespoons olive oil
Instructions
- 1. Heat olive oil in a skillet over medium-high heat and quickly brown the beef cubes on all sides.
- 2. Place potatoes, carrots, celery, onion, and garlic into the crockpot.
- 3. Add the browned beef on top of the vegetables.
- 4. In a bowl, whisk together beef broth, tomato paste, Worcestershire sauce, salt, pepper, thyme, and paprika.
- 5. Pour the mixture into the crockpot and stir gently.
- 6. Cover and cook on low for 7–8 hours or on high for 4–5 hours until the beef is tender.
- 7. In a small bowl mix cornstarch and water to make a slurry.
- 8. Stir the slurry into the stew during the last 20 minutes of cooking to thicken the broth.
- 9. Taste and adjust seasoning if needed, then serve hot.
Notes
- For extra flavor, add a bay leaf while cooking and remove before serving.
- You can substitute sweet potatoes or add peas during the last 30 minutes of cooking.
- Serve with crusty bread for a complete comforting meal.
