For Tacos al Pastor:

1 lb pork shoulder, thinly sliced

3 tbsp achiote paste

1/4 cup orange juice

2 tbsp white vinegar

2 cloves garlic, minced

1/2 tsp cumin

1/2 tsp oregano

Salt to taste

Pineapple slices, diced onions, cilantro, and corn tortillas

For Guacamole:

3 ripe avocados

1 small tomato, diced

1/4 cup diced red onion

1 tbsp chopped cilantro

Juice of 1 lime

Salt to taste

For Mexican Rice:

1 cup long grain rice

2 tbsp vegetable oil

1/4 cup diced onion

1 clove garlic, minced

1 1/2 cups chicken broth

1/4 cup tomato sauce

Salt to taste


Instructions

1. To make tacos al pastor: In a bowl, combine achiote paste, orange juice, vinegar, garlic, cumin, oregano, and salt. Add sliced pork and marinate for at least 2 hours or overnight.

2. Grill or pan-sear the marinated pork until cooked through. Chop and serve in warm tortillas with diced pineapple, onions, and cilantro.

4. To make guacamole: Mash avocados in a bowl. Stir in tomato, onion, cilantro, lime juice, and salt. Mix to desired texture. Serve immediately.

6. To make Mexican rice: In a skillet, heat oil over medium heat. Add rice and cook, stirring frequently, until golden brown. Add onion and garlic; sauté for 1 minute.

7. Stir in chicken broth and tomato sauce. Bring to a boil, then reduce heat to low, cover, and simmer for 18–20 minutes, or until rice is tender.

8. Fluff rice with a fork and serve with tacos and guacamole.

Notes

Tacos al pastor are traditionally cooked on a spit, but a grill or hot skillet works well at home.

Guacamole is best made fresh—add jalapeños for heat if desired.

Mexican rice pairs well with nearly any Mexican entrée. For a full spread, serve with refried beans or grilled veggies.
