Description
A hearty Appalachian-style omelette filled with country sausage, potatoes, onions, and cheddar cheese—perfect for a rustic mountain breakfast.
Ingredients
4 large eggs
2 tbsp milk
Salt and pepper to taste
1/2 cup cooked and crumbled breakfast sausage
1/2 cup cooked diced potatoes (home fries or leftovers work great)
1/4 cup chopped onions
1/4 cup shredded sharp cheddar cheese
1 tbsp butter or oil
Optional: chopped chives or hot sauce for garnish
Instructions
1. In a small bowl, whisk together eggs, milk, salt, and pepper.
2. Heat butter in a non-stick skillet over medium heat.
3. Add onions and cook until soft, about 2–3 minutes.
4. Add cooked potatoes and sausage to the pan, stir, and heat through.
5. Pour egg mixture over the filling and swirl the pan to distribute evenly.
6. Cook for 2–3 minutes until the edges begin to set.
7. Sprinkle cheese on one half of the omelette.
8. Carefully fold the omelette in half and cook for another 1–2 minutes until eggs are fully set and cheese is melted.
9. Slide onto a plate and garnish with chives or hot sauce if desired.
Notes
This omelette is a great way to use up leftover potatoes or sausage.
Add sautéed mushrooms, peppers, or greens for extra flavor and nutrition.
Serve with cornbread or biscuits for a true Appalachian breakfast.
