- 4 large eggs
- 2 tbsp milk
- Salt and pepper to taste
- 1/2 cup cooked and crumbled breakfast sausage
- 1/2 cup cooked diced potatoes (home fries or leftovers work great)
- 1/4 cup chopped onions
- 1/4 cup shredded sharp cheddar cheese
- 1 tbsp butter or oil
- Optional: chopped chives or hot sauce for garnish
Instructions
- 1. In a small bowl, whisk together eggs, milk, salt, and pepper.
- 2. Heat butter in a non-stick skillet over medium heat.
- 3. Add onions and cook until soft, about 2โ3 minutes.
- 4. Add cooked potatoes and sausage to the pan, stir, and heat through.
- 5. Pour egg mixture over the filling and swirl the pan to distribute evenly.
- 6. Cook for 2โ3 minutes until the edges begin to set.
- 7. Sprinkle cheese on one half of the omelette.
- 8. Carefully fold the omelette in half and cook for another 1โ2 minutes until eggs are fully set and cheese is melted.
- 9. Slide onto a plate and garnish with chives or hot sauce if desired.
Notes
- This omelette is a great way to use up leftover potatoes or sausage.
