Ingredients
4 cups peeled and diced potatoes (about 4 medium potatoes)
3 cups chicken or vegetable broth
1 cup milk or cream
Salt and pepper to taste
Instructions
1. In a large pot, add potatoes and broth. Bring to a boil over medium-high heat.
2. Reduce heat to a simmer, cover, and cook until potatoes are fork-tender, about 15–20 minutes.
3. Use an immersion blender to blend the soup until smooth, or mash with a potato masher for a chunkier texture.
4. Stir in milk or cream and season with salt and pepper.
5. Simmer for 2–3 more minutes to heat through. Serve hot.
Notes
Top with shredded cheese, green onions, or crumbled bacon if desired.
For a vegan version, use vegetable broth and non-dairy milk.
Leftovers can be refrigerated for up to 3 days and reheated gently.
